Sorry Ladies & Gents I was suppose to do this post for you a few days ago but I am a little snowed under working alone.
Anyway, here you are give these really tasty mommas a whirl tonight in the Kitchen. So easy to make, literally takes less than 5 mins to make then 20 minutes when you pop them in the oven for a beautiful smell bursting throughout your home.
So here’s what you need – You’ll get the Coconut Flour in any health store, Holland & Barrett or Full of Beans Health Stores Ardkeen Shopping Complex or Georges Court Shopping Centre In Waterford. You will get the rest of the ingredients anywhere really either in Aldi, Lidl or Tesco, Dunnes Stores or Supervalu. Ingredients are not expensive either!
Turn on oven to 350 degrees. Grease a baking sheet
In a food processor, whip the 6 eggs thoroughly. If you don’t have a food processor just whip them as best you can somehow. Then just Add coconut milk in, starting with 7 drops of Vanilla essence. Whip the ass out of this into the mix.
Then add 1/2 cup of fat or ¼ cup of butter up to yourself really. Add butter/oil then whip that into the mix too until it’s mixed really well.
Add dry ingredients and mix gently to mix. Then Taste the mixture to see if it is to your liking. Depending on whether you want it sweeter add more Vanilla essence if not leave it as it is.
At this point, you can add dried currants, cranberries, orange zest, lemon zest, strawberries or avocoda or any other flavour you like even pear! I personally like the avocado or strawberry!
Then just spoon onto your bakin tray bang it into the oven for 20 mins on 200degrees.
When they are cooked I topped mine with blueberry jam, natural yoghurt and blueberries bloody delicious. Serve with a pot of Barry’s Tea scrumdillylious!
Remember to set your timer for the scones so they don’t burn lol!
